This is a low carb adaptation. There are no potatoes in this particular recipe due to my low carb lifestyle. It is tasty. You may add sour cream as a garnish.
There are many substitutions to be made to this basic recipe. Have fun playing around with it!

Quick and easy yummy soup to warm away the winter chill. Converted a Cream of Broccoli soup recipe(substituted ground beef for broccoli and added creamy spicy cheese dip) for a hearty substantial dinner soup with only 9 p+.

Since the original recipe submitted by JOEKNEE had ingredients that were higher in carbs (i.e. fat free HH, carrots, turkey), I tweaked it and brought the carb count down some! Remember to calculate Net Carbs (subtract the fiber count from the total carbs) to get the true # of carbs.

This tastes exactly like a cheeseburger and is so good, you can't have just one ... serving! My family, including my grandchildren love this - it is a "man" kind of soup. As my granddaughter said, "It's not a "soupy" soup!" Enjoy!

This is a hearty soup...I originally made it with only 1/2 lb meat, but my husband insisted that it wasn't enough!

I adapted this recipe from Cuisine at Home. I used 1% milk and fat free cheese in place of whole milk and full fat cheese. I really like the butter in the recipe, so didn't change that, but for those looking for less saturated fat, could probably substitute oil

Great comfort food and it tastes sooooo good.

A hearty soup that you will want to keep the recipe on hand at all times. Use for lunch or a quick dinner with side salad. You can cut the amount of sodium used in this by using low sodium broth, and using half of the velveeta.

High protein and filling. Garnish with shredded parmesan if desire.

This is a great soup for kids. The vegetables cook so that they blend right in with the soup and the kids won't even know that they're there.

I modified Stephanie O'Dey's version of this soup. I went through sparks and didn't find the same recipe. I changed Tobasco to Worcestershire Sauce. I used 2% Milk Velveeta & increased the onion & added mushrooms. [To bad Velveeta doesn't come in Swiss.] Serve with slice of Italian Bread or with Taco Chips. Increase or decrease ingredients such as the ground beef or potatoes according to how many people being served.
Mine would be lower sodium because I used homemade chicken broth. You can also reduce the amount of W. Sauce and the amount of the Velveeta to reduce the sodium.

Number of calories could easily be reduced by using ground turkey and lowfat sour cream. This is a very satisfying soup. It tastes even better the next day!
