I'll put the full fat version because it's all I've made & it won't be any more calories than this, but you could use fat free cool whip & cream cheese & margarine instead of butter.

The photo is double the recipe. I use 2-9" rounds for this one.

190 calories per slice and pretty tasty. Not as smooth as regular cheese cake but a nice low calorie option. Extreamly easy to make and eat!

I found this recipe in Women's World magazine. I made a few substitutions, for example, using the yogurt blend of ice cream instead of "light."

I made this for the first time yesterday and took it to my daughter's girl scout meeting...there was only 2 slices left by the end of the meeting, and hubby ate those as soon as I got home with it! every one loved it!

My mom use to make something similar, but since I have developed Celiac, I can't eat hers so I came up with this Gluten Free version. Great with a scoop of vanilla ice cream.

Finally, a strawberry cake that doesn't call for gelatin or pre-packaged cake mix! Yes, I do bake with butter, but feel free to sub margarine if you so desire.

Note about using cake flour: You can use all-purpose flour in place of cake flour, substituting 2T cornstarch for 2T AP flour for each cup used (in this recipe, you will use 4.25 T cornstarch and remove 4.25 T AP flour from the measurements listed). Sift, sift sift your dry ingredients!

This tastes great with a lemon icing, or topped with some homemade glaze made with fresh strawberries, cornstarch, a little Splenda or sugar.

A great dessert to end any meal!

Light and Delicious

More of a coffee cake than regular cake. Much less sweet and could be made healthier if you're good at fooling with baking recipes. I've also used blackberries and peaches(yum!).
