This a flexible recipe that is both gluten, lactose & fructose free. Any type of liquid (milk, pumpkin, juice or plain water) can be used instead of orange juice. Quick and easy to prepare and roast, and absolutely decadent. Also low cal and low carb for each little serving!
Heat the oven to 450°F. Grease a 9-, 10-, or 12-inch cast-iron skillet and place it in the oven to get it good and hot. Combine egg and oil in a medium mixing bowl and blend well. Stir in the cornmeal mix and milk until smooth and creamy. The batter should be easily poured like pancake batter. If it seems a bit thick, add a little more milk or water.
Pour the batter into the hot skillet and bake until the crust is golden brown. The 9-inch skillet will take about 20 to 25 minutes to bake; the large skillet will take about 15 to 18 minutes to bake; and the medium skillet will take somewhere in between. Makes 8 servings.

*UPDATE: Made this as tuna salad, and wow. Wow. Wow. Fantastic! Only things I did differently was to use one roasted pepper, one roasted poblano, and 1/2 of one roasted purple onion, and cut the recipe in half (didn't really want to make 3 lbs. of tuna!) Definitely a must-try!
I had some veggies that needed to be used, so I just threw this all together, it turned out fresh and flavorful!
Red potatoes are great in this recipe since they are lower in starch than Yukon Gold or Russets, but you can use any potato you have on hand.
