I put this together because my little one loves egg mcmuffins. I wanted a healthy alternative! I usually make enough for the whole family.
Yummy & healthy daily breakfast. I sometimes add half a banana or craisins for a different spin on my daily breakfast.
This is the base recipe for the oatmeal I eat for breakfast. It makes a very large serving, but it keeps me on track for the whole day, so it's worth it. I add freshly sliced or chopped seasonal fruit as soon as it comes out of the microwave. If I'm off to do something really strenuous I might add honey or maple syrup instead. Don't skip the pinch of salt. It really heightens the flavor of the other ingredients, and the amount of sodium it adds is quite small.
Hearty low fat scones. The sprinkling of sugar and spice on top fools us into thinking these scones are sweet. I ofter substitue raisins, craisins, cranberries.
A quick and filling breakfast. I use taco size tortillas, but burrito size work as well.
