This is a simple and healthy breakfast to grab on the go. I fix these on the weekends and grab them on the way to work. You can freeze these up to one month or they will stay fresh in your fridge for 3 days.
A recipe I modified from a recipe I found on this web site. The batter comes out fairly thick, so I add the 1/2 cup of water as necessary. I live at a high altitude (alt = Denver), so you may need to add less water. I add fresh blueberries to the batter, and melt frozen berries in the mircowave and add them on top for a delicious breakfast!
I love morning glory muffins, but don't like the bakery ones full of fat and who knows what else. These are the ones I came up with to satisfy my craving. They avoid tasting like cake, and are pretty nutritious. My husband likes the coconut as is, but I would prefer less, and just sprinkled top. They would be good with some pineapple in them too.

I love fried eggs but I hate all the grease that comes with them. I've been told this is like poaching and egg, which I can't do. I tend to "steam" them instead. It's also really fast.
The combination of asparagus and chorizo makes this a healthy and filling meal for any time of day!
I got this recipe from Recipezaar..the original author's screen name is punkyluv. I use this as a base and add whatever veggies I have on hand. Right now, I am making it with portobellos, tomatoes and jalapenos...YUM!!
