I got this recipe from a member of the Managing Diabetes Group! team. I left out the Salsa, Green Chilis, and shredded potatoes. I use whole wheat Tortillas instead of white flour ones... Carbs = 27.4 each
Also, I couldn't find just plain breakfast sausage on the list of ingr. so I used the maple flavored one.
I used half of a costco pineapple, and costco frozen strawberries in the vitamix to make this delicious smoothie. The strawberries were extra large so I estimated if I could smash them down what they would measure.

Chop whatever vegetables you have in the refrigerator left over from a party the night before. Enough to make 3/4 - 1 cup of chopped vegetables.
