2 cups cooked chicken, cut into small pieces
1/2 cup celery, diced
1 cup red apple, diced
1/2 cup seadless grapes, halved
1oz walnuts, chopped
1tsp parsley, chopped
2 tbsp Light Mayo
3 tbsp lemon juice
salt and pepper to taste
8 Romaine lettuce leaves

an easy make a pasta salad with dinners leftover bbq chicken for lunch the next day.
I did add the approx time for making the chicken. Making the pasta salad is much shorter time. I just diced the leftover 2 breasts up and put them in the mix. This is the 1st time I made this, but it lends well to additions.
3C's because it contains: celery, courgette(zucchini) and carrot. My omelet fell apart when serving in the picture.
I had a few leftovers and threw them together. The result I thought I'd share :)
