Panda Wings (aka Spicy orange chicken wings)

I got this from FoodWishes.com and have made a few adjustments over time. I use breast meat instead of wings (increase chicken to 5lbs if wings) and increased the amount of flour.

Corn/Seafood-Coconut Chowder

This is a chowder made with low-fat coconut milk. It has cumin, garlic, lemongrass, cilantro, lime juice, and fresh minced gingerroot, jalapeno peppers for flavor. The addition of your choices of seafood are crab meat, bay scallops, medium shrimps, oysters, or lobster meat! I use a combo of shrimps and crab. Leave out the salt completely and you'll never miss it!

No-Bake Cookies

A delicious chocolate, peanut butter, and oatmeal treat always popular at a party. NOT a diet food. This recipe with it's accompanying directions produces a smoother end product than others I have tried as the sugar is allowed to dissolve properly and does not retain a "grainy" texture

Lady Tiger Roll - Sushi

Lady Tiger Roll - Sushi

My FAVORITE. I love sushi but all Japanese restaurants in my area charge outrageous prices, so I learned to make my own in a fun, easy way that only costs about $3.00 a roll (even when buying pre-cooked ingredients.) This recipe makes about 6 big pieces, which always fill me up. If you need more of a meal, try adding a teriyaki chicken appetizer.

Steamed Pork and Turkey Dumplings

WARNING: This recipe, as is, makes approximately 144 dumplings.

Yummy, healthy, steamed dumplings, just like the Asian restaurants make (well, almost).

You will need some sort of 'steamer' to cook these. I used a metal, multi-layer steamer I purchased through a local Asian grocery store.

Asian shrimp "steamfry"

By steaming the vegetables and rice, and boiling the shrimp, this "steamfry" is much lower in fat than a traditional stirfry, but just as delicious and so easy!!!

Thai Beef with Chiles and Basil over Coconut Rice

Adapted from Everyday Food, September 2009. Changed the coconut milk to light, used low sodium soy sauce, and changed the jalapenos to Anaheim Chiles because I have an abundance of them in the back yard! Also lowered the servings from 6 to 4

Bean thread noodle soup with prawns and vegetables

This tasted delicious! In spite of the long list of ingredients and lenghy-looking preparation, it all went together rather quickly and was ready to eat in about 30 minutes. We loved the spicy/minty taste of the chillis, the crunchy barely cooked freshness of the vegetables and the exotic slimyness of the noodles. Mmmmm!
