Yummy soup, I found the recipe in a costco magazine and have tweeked it. I will definately be having this again!
Add a little hot sauce and a 4 oz can of green chiles to spice it up! Good soup for a cold day, spicy and high in fiber. Rinse the beans to reduce the sodium content, or use low sodium options.
Crêpes are a weekend family favorite in our house. They can be eaten with savory or sweet fillings. Some savory filling ideas are sautéed mushrooms or cooked spinach with a bit of nutmeg, milk and quick shake of garlic powder. Sweet fillings? Try a couple of squirts of buttery spray and a sprinkle of splenda for SUPER simple. Other classic sweet fillings include fresh strawberries or 100% fruit jam. These will make you feel like you're doing something bad but if you keep your fillings light...you're having a lovely treat. FYI - I have had success with using 1/2 whole wheat flour and 1/2 white flour. If you do this increase your batter resting time to 1.5 hours.

What I love about this recipe is its versatility. The roasted grapes are delicious with grilled bread as well or all by itself with a spoon! It could be served with any number of cheeses. I'm betting a blue cheese pairing would be spectacular!
