This is filling. If you like butter chicken, you will like this because it uses the same curry spice.
1. Add the oil, garlic, onions, potatoes and the spices to a pan to heat and get golden.
2. Add chicken and 3.5 cups of water. Bring to a boil.
3. Reduce heat and simmer uncovered for 20-25 minutes until the chicken is tender.
4. Add chickpeas. Cook for 5 minutes.
5. Serve over flatbread. Drizzle lemon juice over the stew and sprinkle with sumax.
Nice and easy. This soup is rather thick, can be lunch or dinner recipe. Only 350 cal
I made this based on several recipes I saw. I'm sure each person's version will be different, but this is what I had in the fridge to make it out of today! We like ours a little spicy too, so adjust to your taste.
I make my w/ extra garlic. It makes 12 1 cup hearty totally filling servings.
