Had some coconut milk that I had to use somehow, since it wasn't "doing it" for the kids as a milk replacement. Hm. Curried something! WIN!

I have taken this dish and substituted Greek yogurt for the heavy cream in the original and made it much healthier. It dropped 170+ calories and 20+ grams of fat.
This is a mildly spicy curry with a lot of flavor for very little calories. It's also quite filling! Adapted from "The Curry Bible" with a few changes, such as using a little less oil.

I live in Pakistan so I use the vegetables and fruit in season here, but you can use just about any that you like. Peaches and apples are very tasty in this dish too.
Hearty, filling, and super-easy to make with mostly stuff you probably have laying around already. It also freezes well, so you can make a huge batch of it and keep it in single-serve portions in your freezer. It also keeps for about a week in the fridge. Good stuff!
I was taught this recipe by my Pakistan International Student. Took me 2 tries and now this is the good recipe. Make sure you buy smaller lentils or else I found it didn't work so great.
This is a fantastic, low fat dish that can be used when dipping veggies or pita. Also great slathered on a tortilla, wrapped up with veggies. Stays good covered in fridge for over a week.
