The fennel and basil are somewhat similar in flavor and complement each other. If you're not fond of fennel, celery can be substituted for the fennel.
This is a recipe from the South Beach Diet book. Although I am no longer on the diet i still eat this all the time because it is so simple and absolutely delicious!
Water, tap, .5 cup (8 fl oz) (remove)
Cashew Nuts, dry roasted, .5 cup, halves and whole (remove)
Olive Oil, 1 tbsp (remove)
Cider Vinegar, 2 tbsp (remove)
*Braggs Liquid Aminos, 3 tsp (remove)
Garlic, 1 clove (remove)
Pepper, black, .25 tsp (remove)
Delicious! Could probably get way more serving than this but this is my estimate for really generous helpings.
