Just a quick note to say thanks for the positive feedback about my recipe. Just a few tips about my recipe. I have a fan in my oven which allows me to reduce the temp. The temp in my recipes is about 10 degrees C. lower than in a conventional oven. That is about 25 degrees F. lower. This recipe makes a huge loaf of bread which is great plain, with your favorite spread or as french toast. See Challah French Toast.

I wanted to show that my toaster oven was useful for more than just small warm-ups and toast. I tried a corn bread and I was very pleased with the results. Obviously, this can be done in a full size oven, but It worked well. Oh, and I used my Magic Bullet to make Oat flour. How cool is that?

Escarole
One of the items in this week's share will be Escarole. It is a variety of endive whose leaves are broader, paler and less bitter than other members of the endive family. In tastes somewhat like radicchio and is high in folic acid, fiber, and vitamins A and K. It makes a nice addition to salads and is also excellent in soup
This hummus dip is quick, easy, has almost no fat, and is always a huge hit at parties! This recipe contains no tahini or olive oil, but it still packs a punch - it has a fresh, lemon garlic flavor, plus it's high in fiber so it's very filling! Serve with cucumber, green pepper, and celery slices, as well as your favorite crackers.

Substitute Califlower for the pototoes, eggs whites for the hard boiled eggs and fat free yogurt for the mayonnaise makes this dish low fat friendly. Great for a picnic!
