This wonderful fall pudding of fresh corn and eggs made regular appearances at Thomas Jefferson's table. Delicious served warm with a splash of cream poured on top or cold as a sidedish or mildly sweet dessert.
Use equal parts green, red and black grapes to make a great presentation of this wonderful summer treat. Great at Bridal/Baby showers or any other special occasion. Best if made the night before. Serving size 1 cup.

I did NOT add in dehydration time. This is a very thick bread, so it may take quite some time to dehydrate it to your liking.
I estimated that 2 pieces is equal to 1 serving.
Peel, Cut and Cube eggplant and yellow crookneck squash into 1 inch pieces. Rinse under cold water, drain and spread on 11x15 baking sheet sprayed with PAM. Arrange in single layer and top with sliced onion rings. Drizzle or Use olive oil mister to spray all veggies (coat evenly). Bake uncovered in 375 degree over 20-25 minutes. Remove from oven. Spray a 2 qt casserole and transfer veggies to dish. Stir around then salt & pepper to taste. Sprinkle the garlic powder to top. Spoon jar sauce over all veggies and top with shredded mozzarella, then sprinkle the parmesan on top. Cover and Return to oven another 20-30 minutes (until bubbly). Serve with additional cheese if desired.
My grandmother, who recently passed away at age 100, made this recipe every year. When she got into her nineties, she taught me how to make it. Lefse is a Norwegian flatbread eaten with sugar, cinnamon and butter (or any topping at all), and requires a flat stainless steel griddle, scored, covered rolling pin, turning stick and cloth-covered pastry board, all of which can be purchased from the Bethany company.

Easy 35 + year old recipe. My family ask for it every holiday. It's great for pot luck meals, bereaved family , or recovering friend. Working moms, this recipe was my mainstay when I needed to contribute to a group meal.
This recipe is always a hit at any gathering. You will always bring home an empty pan! I have "lightened" the original recipe by using less margarine and a light sour cream. You could also use reduced fat cream of mushroom soup to decrease the fat even more.
I buy bagged fresh spinach as a grocery staple. I make this fast side-dish because we love spinach, it's flavorful and it's healthy!
