The perfect Sunday dinner for a busy weekend. You can substitute any cut of beef, even the really cheap ones and it will be so tender it melts in your mouth.

I make this in the slow cooker, but it can be simmered in a heavy pot on top the stove, stirring often, or in a 350 oven. Both these alternate method will take about 2 1/2 hours. They will take more water than the slow cooker, so check frequently to make sure they don't cook dry and burn.
A hearty vegetarian stew that can be cooked on the stove or in the crockpot! My measurements are in grams/ounces because I weigh my food whenever possible instead of just measuring with cups.
The recipe calls for 8 oz canned no sugar added tomato sauce but I just pureed 3 small beefstake tomatoes. Turned out really good. Serve over a bed of lettuce or raw spinach or as a burrito with fresh spinach, tomato, avocado, shredded cheese and sour cream. Careful, lots of liquid
