I make this with leftover grilled steak, but you could use any leftover cooked beef.
I adapted this recipe from Martha Stewart's Chicken Barley soup. I didn't have any barley, so I substituted brown rice.
This is a high protein, low carb soup since it's made with chicken broth, ground turkey and vegetables but not starch. Add your favorite spices if too bland.
I don't add the Italian dressing - i dont think it's as good.
Quick Method recipe. To morph recipe, add Ham or ham hocks for the turkey sausage. The meat are not calculated in recipe. Can also use beans to top salads or marinate for a salad. 1/2 cup cooked should be a serving. Recipe is to make 16 servings.
