This recipe requires Bird's Custard Powder imported from England or Canada. It can be obtained at any Cost Plus World Market store or any local British food merchants. I have been unable to find a US equivalent that doesn't already have sugar or bad sugar substitutes already added.

Yield: 4 cups, about 1-1/2 cups each
Diabetic Exchanges: 1/2 Other Vegetable, 1 Vegetable, 4 Very Lean Meat
mix all ingredients into a mixing bowl, bake on 350 for 20 minutes in cupcake shells
Sift dry ingredients together. Add liquids. Slice apple into thin slivers, add to mix. Use 1/4 measuring cup to scoop batter into pan. Flip pancakes when top starts to bubble in the middle, make sure to cook fully to avoid doughy pancakes.
Can use nonstick spray or tsp canola or vegetable oil in pan to avoid sticking.
I came up with this as we needed a dish that was healthy for a cardiac and diabetic patient and still tasted like a treat.
