Mixture of vegetables, fruits, oats, flaxseed and wheatgerm put through the blender.
Found on a paleo site, but I changed a few things,so I don't know if it is paleo anymore.
These muffins are delicious and healthy! They are only 165 calories per muffin, use whole wheat flour, oats, and applesauce instead of butter! Great for breakfast or a mid-morning snack.
Cook and squeeze dry spinach, combine all ingredients in a glass bowl, cover and microwave til done.
This is a great and healthy way to get your greens. Delicious. I sometimes add a little flax oil but don't have any on hand so didn't put it in the recipe.
Some mornings I just don't have the time to make and eat breakfast AND coffee, so I combine the two in a smoothie!
Originally a healthy version of a "zucchini tots" (healthy version of tater tots) recipe, I substituted yellow and green squash for the zucchini and made these mini omlette muffins. They taste like a healthy breakfast pie/omlette, stuffed with squash, onion, and held together by eggs, bread crumbs, and a little cheese.
