Low calorie blueberry muffin gets a boost with Quinoa. I used a Stevia baking mix to cut calories. I also used whey from yogurt. You can substitute plain ff yogurt or milk, but it will increase the calories. These muffins will be chewier than you are used to due to the fat substitution with ff yogurt.

This is a recipe on SP. When I made it, I used Splenda instead of white sugar so I wanted to see the calorie difference (original recipe has about 167 calories per serving). Half the calories! I'm guessing on the serving size since it wasn't listed from the other recipe.
