A quick and easy breakfast casserole suitable for a brunch group, or for those who like to prepare multiple servings of breakfast in advance for eating well on the go.
Lots of filling vegetables and pre-cooked turkey sausage crumbles (new from Jimmy Dean). Can also scramble a couple of eggs to bulk it up but be sure to add in the extra calories/fat.
I really enjoy French Toast occassionally and tried to make it a bit lighter in calories and fat. I did use Splenda, but for those of you who don't believe in sugar substitutes, please go ahead and use the real thing (just remember the nutritional value may change some). Additionally, my wheat bread is pretty hefty and about 100 calories a slice. If you use a light wheat slice, your calorie count will be less.
