Multigrain Hot Cereal & Whole Wheat Flour Muffins
A Sunday morning breakfast regular!!
This hearty breakfast is a mix of quick oatmeal and steel cut oats as well as a healthy dose of dried fruit. It's a big batch that can be frozen in muffin tins and then thawed easily for quick breakfasts any time you'd like.
Pancakes that are full of hearty lean protein, but not loaded with too many carbs like regular pancakes.
I had the remains of the very fattening biscuit mix recipe laying around and decided to put a little spin on it to try and make it a little more healthy. It worked, relatively speaking. This mix is meant to made with Crisco, I used coconut oil... And has a very high fat content. I diluted it using bananas and coconut flour, but it's still a very calorie dense option. On the plus side: I could only eat half of a pancake because of how dense they are!
This isn't exactly a quick breakfast if you're used to a bowl of cereal or a banana, but it's a delicious and nutritious vegetarian/vegan take on eggs and hash browns.
And if you're like me and find it hard to reach your calorie requirements, it's a great source of healthy fat.

This yummy breakfast option has less than 200 calories, is very filling, and can be made in about 10 minutes! Since sucanat (sugar cane natural) is used in place of sugar, it is a much healthier, much more natural way to enjoy a slightly sweet treat.
If you are unfamiliar with sucanat I suggest you read a little bit about it and give it a try. It's good for you, for the farmers and for your family. And once you cut back on refined sugar (white/granulated) this will definitely be sweet enough for you. Although, I will warn, that if you are used to having refined sugars in your oatmeal this won't taste sweet at all. Feel free to add a couple teaspoons of sugar to it if you like, just don't forget to track them separately!
