Please use heaping 1/3 cup of coconut flour instead of shredded coconut. Please use 1/2 cup fine almond flour. You can use farmers cheese or small curd cottage cheese instead of ricotta. Also add 1-2 tbs Psyllium husk or xantam gum ( optional) Also use erythrol (swerve) instead of xylitol. And add 1 tsp baking powder. Mix all and bake on 350 for 50-60 min or until inserted toothpick comes out clean. Leave in warm oven for 15 -20 min before taking out . Cool at least 30 min before serving . i figured out that I am NOT eating enought protein. I was watching Big Daddys House and he made a similar omelet. I meant to use only one whole egg but sometimes eggs do not cooperate when you try to seperate them! ::-(
Not a 'vegan' food. This dish was found on Martha Stewart's Everyday Food website. Sooo yummy :) shown served with a peice of whole wheat bread and salad.
Great for fall! Original recipe calls for 8 scones, but I cut them in half to make 16 - that way I get the taste of a great scone, but at a more reasonable size. I also use half all purpose flour and half whole wheat flour to add some fiber

This is an extremely tasty item to have for brunch. The only problem with it is that it is so good you can eat a serving in no time flat! Ah well.......
