I found a pancake recipe for rolled oat pancakes in a recipe book from the 20's. I loved the idea of oatmeal pancakes so I worked with the recipe until I had a pancake that was "healthy". The orginal recipe called for lard, sugar, salt, bleached flour, and whole milk. This recipe could be made with fewer calories, etc. by using 3 egg whites instead of 2 whole eggs.
I make this for any meal, as it is so good and filling.. Its my way to have a Hot sausage Sub wirhout all that bread.

The best scrambled egg substitute I have had so far. You can roll this mixture into a tortilla wrap like a burrito or eat it on it's own with some toast.
This is a modified recipe that my mother has served our family for years. She got the recipe from a bed and breakfast cookbook in the 1980's.

This is from the BBC "Grow your own drugs" program. I found it amazing for my cold and it cleared up in one day. I LOVE this soup. Its easy to make and very fun. I added my own twist on it for my health kick. Its so full of protein and great to give a little wake up call mid day.
You'll need a cast iron skillet for this one.
Use it on its own as a complete, high protein breakfast or split it in 4 as a healthy brunch item.

Makes 6-8 yummy no-grain muffins. Sometimes I put them in a pan an cut them up, instead of muffin tins.
This is a reduced fat, much healthier version of Huevos Rancheros. Spice it up with more chili powder or add a little cayenne pepper. Approximately 350 calories for each serving and this recipe makes 4 servings. Easy to reduce amounts to single servings too.
A stable in my home. No sugar, simple to make and you can choose to add optional items to personalize this yummy granola to your taste. Great with fruit, yogurt and ΒΌ cup of this granola is just wonderful for breakfast.
* Parmesan Cheese, grated, 1 tbsp
* Mueller Whole Wheat Rotini, 1 cup
* Super Vegetable Primavera, 1/2 cup
This is a delicious recipe that is simple to make and only takes 45 minutes from start to finish to prepare.
Made this on a whim and it tasted amazing. I cooked it all at once which made it easy and yummy, but I'm sure someone with more patience might find even more flavor if they blanched the leeks separately and then added them to the rest. I served this as one serving aside miso soup.
These waffles are delicious and light. Serve them with warm maple syrup or fresh berries if you like. I like to top them with low-fat yogurt and a few fresh berries.
Vegetarian salad, with a lot of flavor. Serve as a meal or as a side dish on a bed of lettuce or in pita pockets. Tofu may also be pan fried in a small amount of oil with a tablespoon of curry powder instead of boiling method.
