Moist, delicious and healthy...and my junk food eating husband LOVES them!
This is my own take on the dish. I like it for lunch or maybe brunch on Sunday. I was inspired by the brunch I had a the Belagio last time my husband and I were in Vegas.
This is a modified recipe from Alive in Five by Angela Elliott.
Serve with Nut Milk
makes 2 servings of 3 small pancakes
this recipe is calculated with soy milk and applesauce

preheat oven to 350.spray 13x9 inch baking dish with nonstick cooking spray.set aside. cut chicken into 1 inch pieces set aside.2. combine broccoli and carrots in 1 quart microwavable dish. cover and microwave at high 2 to 3 minites or until vegetables are crisp tender set aside. 3. combine soup milk in small saucepan over medium heat. cook and stir 5 minutes. stir in cheese,chicken,broccili and carrots. cook 2 minutes until cheese melts remove from heat. 4. spoon 1/4 cup chicken mixture into each tortilla. roll up and place seam side down in prepared baking dish. bake uncovered 20 minutes or until heated through.
This is a great dish for an electric skillet and it is fast to prepare and quick to cook. Also good for vegetarians as a main dish.
Quick and easy to bake. You can bake it the night before and it reheats well. Sometimes it taste better the next day anyway.
I skeptically ate this over three years ago and was hooked. It is so flavorful, even without any meat.
If your sausage comes from the butcher as salt & pepper pork sausage, omit the salt. Don't skip the nutmeg because you think it will make your sausage sweet, it won't and it adds a very nice depth to the sausage. You can add the same seasonings to ground turkey if you'd like. We happen to have pounds and pounds of fresh pork in our freezer!
