This makes a moist delicious pancake that can also be used as a crepe recipe. If you use to make crepes, you can add, tuna with green onions and a little mayo for a delicious lunch or brunch menu.

In a bowl, combine the biscuit mix, Parmesan cheese, parsley, oregano, basil and salt. Combine eggs, oil and onion; stir into dry ingredients just until combined. Stir in zucchini. Transfer to a greased 13-in. x 9-in. x 2-in. baking dish. Bake at 350 degrees F for 30-35 minutes or until golden brown and set. Cut into squares.
I made this up for me because I don't drink alcohol and it's okay to share with the whole family. A refreshing, fancy drink! It's very pretty and tastes good!
I altered a tasty restaurant recipe that is a twist on plain banana muffins to take out most of the sugar (there's some in the Splenda Brown Sugar Blend, but you can just use all Splenda, being sure to convert to the correct measurements, if you want a sugar-free version). I also used non-fat milk and canola oil to reduce some of the fat. To make this even healthier you could also use whole-wheat flour and/or egg beaters. You can also use just about any nut you choose. The nutritional information is for walnuts.
The addition of the cinnamon and chunked bananas is a nice twist on regular banana nut muffins
