Healthy Pancakes made in the blender with oatmeal, cottage cheese, banana and an egg! Easy to make, filling and high in protein!
Great for the cooler weather and sprinkle a little low fat cheddar cheese on top if you feel like going all out!
Night Before: soak beans in 8 cups of water overnight.
Boil beans for 2 hours with 1/4 cup of vegetable oil; stir occassionally.
Blend 2 tsp hot sauce and cooked red, pinto, and black beans; then refry in vegetable oil
Puree 1/2 a medium tomato with 2 tsp hot sauce and
chop the rest of the tomato
Chop 1 cup salad mix
Right before you serve: heat tortillas either for 20 seconds in microwave

This recipie is based on 16 servings. All the ingredients have been based on Net Carbs subtracting Fiber and Sugar Alcohol. The Brownie Mix is based on prepared with 1/3 cup oil and 1 egg. Can be prepared the previous day a refrigerated over night. Great to take to work functions or pot luck. No one even knows it is sugar free unless you tell them.
