I have made a substatution on the potatoes. I used 2 Russet potatoes instead of 6-7 small red potatoes. I have also used frozzen chopped spinach instead of fresh to save time. I also did not include the milk.

This is a slightly modified version of a Weight Watchers recipe. I used 1/2 cup of whole wheat flour and 1 cup all purpose instead of only all purpose flour. You can add blueberries or chocolate chips to the batter to make it extra yummy!

My grandmother used to make a pancake breakfast for the family every Sunday when I was little -- complete with bacon and sausage links. These are by far the very best pancakes I've ever tasted.
