This is an update on my grandmother's recipe. She used a whole cut up chicken, and cooked this for hours. The no bones version prevents nasty bits, and cuts down the fat. To decrease fat further, omit sour cream. Using low or no fat will sour the sauce, but not make it taste like it should.
This is made with corn and broccoli, but any vegetable can be substituted. Great use of leftovers!
Ingredients
1/2 cup light mayonnaise
1/2 cup 2% milk
4 eggs, lightly beaten
8 ounces shredded reduced-fat Cheddar cheese
1 (10 ounce) package frozen chopped spinach, thawed and squeezed dry
1/4 cup sliced bell pepper
1 (9 inch) unbaked pie shell
Grilling corn gives a nice smoky flavour and southwestern touch to this salad
Omelet in a mug! Just enough meat and protein to start the day and fill full for most of the morning.
