A delicious, healthier twist on my favorite peanut blossoms Christmas cookie.
I modified my sister's traditional Holiday Cake recipe for lower sugar carbs to fit our diet - I substituted 1 cup bran for the second cup of sugar the recipe called for. (I might try 1 cup applesauce + 1 cup bran next time instead of any sugar.)
Buttery Icebox Cookies dotted with flecks of red candied cherries. They taste great plus you can make the dough ahead of time and then simply slice off and bake the cookies as needed.
This is a variation on the recipe that my mother always made at Thanksgiving and Christmas It is fresh and tart and great anytime of the year.
Every year I get asked to make these cookies. They tend to be favorites, and they're less than 90 calories per cookie!

Tasty 3 layer cashew nut roast. Warning - I won't even pretend it's low-cal, low-fat or anything else. It's Xmas after all!!!

Depending on how hungry you are, this should serve 6 or 8. Cuts happily into 8 slices but I always end up serving up a big slab cos it's just too good.

This pie/tart recipe is the culmination of a number of culinary experiments as I sought to design the best low-carb, sugar-free dessert to wow my relatives with at Christmas! I am very happy with this, and I hope you will enjoy it too. A VERY decadent treat for a surprisingly low amount of calories (all things considered), still avoiding the blood-sugar spikes caused by grains and refined sugars. Christmas cheer without the cramps and crankiness!
