One of my fave things growing up on a winter day was when my mom would cook something that filled the house with great aroma and fogged up the windows, which is why I choose to cook this veg chili on cold days for the same effect, there are so many versions out there, but this one has proven to be flavourful and comforting after many test trials of different recipes. This is amazing served over coconut rice! If the sodium level is too high for your preferences, you can reduce the amount of soy sauce and replace with olive oil or water.
Chop the following vegetables finely: 1/2 head of green cabbage, 1/4 head of red cabbage, 4 scallions, 1 serving of chopped green olives, and 1/2 red apple (with skin), diced. Mix together in bowl. Grate 10 baby carrots, add to mixture. Add 1/4 teaspoon of fennel seeds, and 1 teaspoon of thyme, and a dash of cinnamon. Add 4 tbsps. of lemon/olive oil dressing. Can add tomatos and avocado for extra taste.
