Delicious twist on Chili and it couldn't be easier to make. In a pot add 1 can of white kidney beans, 1 cup of salsa, 1 1/2 cups of vegtable stock or chicken stock, 2 cups of cheese (optional) it really thinkens it up but i stopped doing it to cut back on calories, 1 tbsp cummin, and 1 cup shredded up pre-cooked chicken (optional), just before serving add a handfull of crunched up whole wheat tortilla chips a sprinkle of cheese and a tsp of sour cream on top.
We first had this at a GS camp out with Fritos and cheese. It is also delicious (and more healthy) by itself.
Only 5 main ingredients! This meal cooks up quickly. This is one of my family's favorite meals, paired with a large salad and home made sweet tea. This meal is an all weather food, good anytime for any occasion.
