Uses a lower carb flour and is gluten free. you may have to add a teaspoon of water if your flour is particularly dense. Great with coffee or coconut milk
These are NOT good for you, but I have eaten them since I was a child--everything in moderation, right? This is an old-fashioned recipe, nothing low fat except the milk. They are fudgy and delicious!

Dessert Sauce, great on ice cream, or mixed with chocolate sauce. Can be drizzled on cake. Also good swirled into brownie mix.
Now of course these are not as good as "real" cupcakes, but if you are trying to watch what you eat but need that chocolate cake fix, these will do the trick! I like to whip up fat free topping or low fat chocolate mousse to use as icing! Give them a try! Variations would be to add cinnamon for a mexican flavour or shredded carrots for some extra fibre!

I left off the salt and candied ginger.
Slive 5 or 6 apples & place them in a slightly oiled 9 inch pie plate. Pour 1/4 cup apple juice over apples. Combine in seperate bowl & stir well all igredients.
