My Mom, from the American South, made boiled custard for Christmas and New Years. It is really just a cooked eggnog and I like it better than egg nog. Here is a lightened up cheater's version. You are adding twice the milk for pudding, so this can be sipped.
My grandmother used to add coconut to her pumpkin pie. This is a modification of several recipes that used regular pumpkin and added sugar. This just uses canned pumpkin pie so you don't have to fuss with spices and sugar.
I named this after the Purple Cow shakes my mom used to love. It makes a lovely purple breakfast smoothie, it's low in calories and fat, and dairy-free, which is good if you have milk allergies! Great with a whole wheat English muffin or toast for breakfast, or to replace a milk shake with lunch or dinner. (Try it as a nice drink with a Gardenburger...mmmm)
My grammy's favorite recipe -- peanut butter bars. I substituted splenda for regular sugar and egg beaters for eggs in her recipe.
