Thanksgiving would not be Thanksgiving without my homemade stuffing. If you are in a bind for time you can use Stove Top, skip the seasonings, just cook the vegetables and add to stuffing, but we prefer the real thing.
Meat, cheese, potatoes-we layered these favorite ingredients into a flavorful casserole. Sort of like a deconstructed cheeseburger and fries.

Zucchini boats stuffed with veggies and bread crumbs. I like to make this for dinner/ lunch, but it can also be made as an appetizer. To do this you can cut the zucchini boats into smaller pieces after they have cooked. You can also substitute vegetables and herbs of your choice in this recipe. You can use cooking spray on the baking pan in place of the olive oil.

Tips: You can use honey mustard to substitute the honey and the dijon mustard, still tastes great! The rice calls for butter, but I skipped out on that! If you use natural cooking spray, you don't have to worry about calories hiding in there as well. My family enjoyed it, even my one year old son! I hope you enjoy it! Very simple and very yummy!

the calories may seem a bit high, but this is an entire meal, loaded with veggies. to make it even healthier, use ground turkey or chicken. the portions are nice and hearty, too.
