My delicious version of guacamole derived from several great recipes and my last trip to Mexico.
Got this from my friend, I omitted the beans in this recipe, because I am allergic to them.
For those that love a good ol plate of spagehtti but don't love the plate of calories try this switch a roo.
Ingredients:
Green Peppers (bell peppers), .75 cup, chopped (remove)
Mushrooms, fresh, 5 medium (remove)
Salsa, 1 cup (remove)
Chicken Breast, no skin, 355 grams (remove)
*Extra Virgin Olive Oil, .5 tbsp (remove)
Garlic, 3 cloves (remove)
Onions, raw, 1 small (remove)
Low cal, high protein in a quick and easy recipe. Quick changes such as substitutingchicken for lamb or beef makes for a completely different meal. Adding toppings such as spinach and feta cheese adds new twists.
This is my take on the traditional chili cheese etoufee with crawfish that Yats serves. I've left out the meat, chicken stock and Worcestershire sauce to make it vegetarian. Typically this is served over rice.
Got the idea for this on another site. It originally called for 4 whole game hens but I changed this to accomodate a more reasonable portion size. I also broiled the hens first to cut out the fat a bit and make the skin light and crispy. You can skip this step if you are short on time. Thanks Jean for the idea!
