This is from a recipe by Cooking Light Magazine (June 2011) but I used boneless chicken breasts instead of bone-in thighs. I served with sweet potato fries and my Healthy Broccoli Slaw.

i adapted the skillet lasagna recipe to be gluten-free, added some more vegetables and ground turkey, instead.
This is certainly a family staple in my house. The kids literally beg me to make it for them all the time because they love it so much. Obviously any recipe is open to embelishment so feel free to make to your own taste.
I have used 4 pcs. (4 oz) each of Tilapia. However, that is a pretty healthy serving. You can use 1 pc., cut it in half and follow the same directions.
