This is NOT a low calorie food. I don't recommend having a whole serving if you are on a moderate diet. I will be making a low calorie version of this very soon. (Likely also vegetarian aka Mushroom White Enchelada's.)
BTW I seriously doubt this recipe counts as "Mexican Food." Think of it as American and leave it at that.
A very easy, very tasty and very cheap curry. Would work well with chicken or chickpeas instead of sausages. Original recipe included adding a tbl spoon of Greek yogurt before serving however I forgot to but it still tasted fine. With rice or toast, I able to get 5 meals out of this. Perfect for freezing.

This cheese sauce recipe is for the Chicken Pot Pockets recipe that I entered. I separated the two so that users (including myself) can specify how much cheese we put on our food. It's also great over broccoli. I included the brands and reduced fat info in the ingredient list to account for the calorie count.
