This chowder is healthy due to fat free half and half, delicious turkey breast, and lots of vegetables. It is a terrific way to use previously roasted turkey. But if you don't have any leftover, most stores sell fresh turkey breast cutlets. Simply cook the cutlets over medium heat, then cut into chunks and add to the soup, along with the pan juices!

Please for the love of all that is Holy, buy yourself a wedge of Parmegiano Regiano cheese, grate it yourself, and stay AWAY from the green can. You will thank you.

Nonstick skillets will work fine in 350-degree temperatures, even with plastic handles. You may cover the handle with foil, if you like. Or use a small glass baking dish.
Brown ground turkey and drain. Stir in taco seasoning. Add two 16 oz. cans of diced tomatos. Simmer. Take 4 flour tortillias and slice into 3x 3 squares (approx). Spray a 9X12 baking dish with non stick spray. Put a layer of tortillia into bottom of a baking dish. Spoon a layer of turkey/tomato over tortillias. Sprinkle a layer of cheddar cheese. Repeat with another layer of tortillias, turkey/tomato, and cheddar cheese on top. Bake at 375 for 30 minutes.
