A delicious summer (or winter) smoothie treat that sneaks in the extra veggie that you can't taste but gives a huge kick of nutrition!
This is my version of a fiber blend like metamucel. No sugar or anything artificial. The spices each have a health benefit for the colon. I take I tablespoon a day in a glass of water with about 1 oz of juice. All ingredients should be finely ground.
Refreshing way to use all that summer mint. Extra sugar is added to offset the bourbon. You can certainly tone that down.
Combine all ingredients in a pot and mix while bringing to temp. Let simmer on low until ready to serve. Pour over stir fry. Makes 3 servings
A delicious smoothie I made as a snack. This recipe could easily be split into 3 smaller servings if needed, but I chose to split it just between my husband and me in slightly bigger glasses. Yum!
It came out just a little thick, so I might add a little bit more liquid next time. It did loosen up as it warmed slightly.
