I made this in a 9" pie plate and covered it with aluminum foil because I couldn't find a baking dish with a lid
this is a refreshing, easy dish that would be something good to make the night before for lunch tomorrow.
I was cleaning out my freezer and pantry trying to use up ingreadents. This is what I came up with which tastes delicous!!
I found a recipe similar to this on here that had about 100 more calories, so I tweeked it to meet my needs. It's very good. Add any vegies you like to give it a little extra "umph". ENJOY!

The coconut oil gives a delicious taste to this dish. The High Fiber content in the pasta reduces my husband's blood sugar levels so while no added sugar the pasta has less than 1 gm of sugar.
Light on the sauce that most italian dishes are so it doesn't over power the shrimp. Little coconut oil is used and while it is a saturated fat it has long chain and is much more like a monounsaturated fat. It also can withstand the heat from sautéing which is why I use it rather than olive oil. To lower the sodium content of this dish use fresh tomatoes and basil.
