Most of the ingredients in this recipe are alkalizing, with the exception of the chocolate chips, but they should be largely mitigated by the highly alkaline ingredients. 'Soaking' or rehydrating the coconut flour helps reduce the graininess and give a finer textured product. Simply mix the coconut flour with the liquids and let sit for 15 minutes then proceed with the recipe.
I had a lot of Egg whites to use up, this only uses 2. I also had some unsweetened coconut to use up. These are really delicious - the toasted coconut - must be finely grated and toasted to a light brown . So here ya go!
