Very similar to a lasagna/eggplant parmesan, but much fresher and healthier! Can cut down on cheese, or change up the dressing for your own tastes.
One of my favorite restaurant meals, adapted in my kitchen. Very good, warm and comforting on a cold day!

ubsitute 1/3 c egg whites and 1 egg instead of 3 eggs
used 1/2 c macademia nut butter
used 1/2c pumpkin and 1/2 medium banana instead of 1c pumpkin
added 1/2c water instead of 1/4c water
used 3tbsp coconut flour instead of ground flax
My mom use to make something similar, but since I have developed Celiac, I can't eat hers so I came up with this Gluten Free version. Great with a scoop of vanilla ice cream.

These Stix bars taste very similar, better actually, but contain much more natural ingredients. Similar to the store-bought variety, they contain 3 layers: shortbread cookie, caramel, and chocolate. But, nothing artificial, no additives, and no refined sugars. Just pure YUM!
Great for when you get a sweet craving, 1 ball is all you need.
