I found this recipe on the Angel Food Ministries web site. I make some of the pancakes bigger (teenage he-man size) so there was less servings. This is good for breakfast, brunch or lunch. Brunch and lunch add good stuff to batter before cooking. I cheated and had two small ones 4" . 8 servings Amt Per Serving

Great spread for picnics or work lunch. I had to pack a picnic lunch for a kayaking trip and this is what I had in the pantry. It was a hit! We served it with Ritz Garden Vegetable Crackers (the only thing in the pantry) It makes approx. 3, 3 oz sandwiches or can be used to top crackers for an appetizer.
This filling curry goes well served over brown rice, or with a dollop of plain yogurt and naan bread.
