I really like saag and love it when we go out for Indian food. This is my attempt to re-create it at home, with the ingredients I had on hand. I added corn and mushrooms for extra texture and taste, but feel free to substitute your own vegetable of choice.

This is pretty basic. You can add a lot more sugar if you want, but I wanted a very low sugar, not too sweet finish to my meal. The little bit of fresh mango adds a lot to the sweetness and texture of the dish.
No tomato! No peppers!! I also didn't include the rice int he calculations because how much people use will vary.
This is really delicious - aromatic and filling and so easy. Feel free to add more spice to taste.
