Taken from my mom, who took it from somewhere on the interwebz.
I don't know why the nutritional info doesn't match, but I'd probably go with the original info down under the instructions.
I modified a recipe I found here:

absolutely delicious. A fair few of calories but can be used as a reward? Great for people who love flavour and hate bland foods. Not spicy. Rice can be substituted for the pita bread. Good for dinner parties.
I kick-start my day by drinking this tonic. It's refreshing, yummy and a great way to get 24 fl-oz (3 cups) of water for the day.

Nutritional Info Zahtar only. Doesn't include pita or flatbread or whatever you want to eat with the spread.
Zahtar AKA za'atar, predominately ground sumac, roasted sesame seeds, and green herbs, Zahtar is used to flavor meats and vegetables, or mixed with olive oil and used as a marinade for olives or as a spread for pita or flatbread- a tangy, slightly sour Middle Eastern replacement for a PBJ! The taste of a za'atar mixture can be herbal, or nutty, or toasty.

"This is the most aromatic and fragrant of all Indian spice blends. Used throughout North India in all types of dishes — from appetizers and soups to yogurt salad and main courses — this blend is indispensable to Moghul and North Indian cooking. It is widely available, but my homemade version is more fragrant and, of course, fresher."
Recipe from Indian Regional Classics (Canada, UK), by Julie Sahni.
Light fluffy hotcakes/pancakes. Eat with Sambhar, plain or coconut chutney.
Ekadashi is fast in which in any kind of grain (rice/wheat) cannot be eaten. I created this for my purpose to eat for dinner in place of chappati/roti.
Found a similar recipe online for a tomato based beef curry (no coconut milk). Trimmed it down to make it healthier and changed around the seasoning a bit since I have a hard time finding traditional products in Okinawa. Can substitute a lower sodium broth or use 2 cups of water and 2 boullion cubs. Can also substite ground ginger powder for the fresh (change the measurement though). Feel free to leave out the lentils too if you want to make it even lighter, or even increase the lentils and leave out the beef to make it a vegetarian friendly dish.
