An ideal way to cook risotto if you are busy or want time to do something else. We had two quite large servings.
Bacon and Spinach Pasta with Parmesan is a quick and flavorful weeknight dinner that only requires a few ingredients.
Drizzle some oil in a large pot of boiling salted water, add 1 tablespoon of salt and the linguine, and cook for 7 to 10 minutes, or according to the directions on the package.
Meanwhile, in another large (12-inch), heavy-bottomed pan, melt the butter and olive oil over medium-low heat. Add the garlic. Saute for 1 minute. Be careful, the garlic burns easily! Add the shrimp, 1 1/2 teaspoons of salt, and the pepper and saute until the shrimp have just turned pink, about 5 minutes, stirring often. Remove from the heat, add the parsley, lemon zest, lemon juice, lemon slices, and red pepper flakes. Toss to combine.
When the pasta is done, drain the cooked linguine and then put it back in the pot. Immediately add the shrimp and sauce, toss well, and serve.
This says it'll serve 4 people, but my mom easily made it stretch into 6 servings. We'd eat early and then she'd give my dad the last third of it for his breaks at work.
She usually served this with egg noodles, but rice would do in a pinch. However, it's delicious, and fairly high in calories, so you could eat it plain too.
I came up with this a while ago, combining two recipes for chicken piccata because I didn't feel like making both.
Note - I do not know how long the prep or the cooking time is, because I don't eyeball the clock. I overguessed - prep time is probably more like 7-8 minutes and cooking time is probably no more than 12-15 minutes.

This is a family favorite. Quick and easy to make. I only use Bravo Spagehetti Sauce but you could adapt this with any spagehetti sauce of your choice. A nice thick sauce to pour over any pasta you like.
