Delicious and adaptable recipe that can be altered in many ways. I use two 15 oz. cans of beans, but you could easily use one. Lower calories by decreasing to one avocado. We usually add pepper jack cheese or chopped jalapenos for more kick. I use a whole grain, low carb tortilla while my family prefers a regular flour tortilla. If you have left overs it is easy to make more quesadillas, or when mixed with greens; it makes a tasty salad. It makes about 8, 1/2 cup servings. I have a large family, but you can easily make this dish smaller.

This casserole combines a creamy, spicy sauce with smoky grilled chicken, broccoli, cheese and a crunchy topping. My teenage son loves it and doesn't even realize he's eating broccoli. It's very quick and easy to make, especially if using leftover grilled chicken.
These taste just like cinnamon sugar doughnut holes. Yummy, but they are baked not fried and not the high amount of calories of regualr doughnut holes.
