Something I whipped up for me to take over to my dad's this weekend. I'm feeling kind of low, but the ginger root, spice and lime paired with the shrimp, noodles and veggies will perk anyone up!

This is a great Southwest vegetarian based stew which makes two large or three smaller servings. You may add chicken, a link of your favorite sausage, shrimp or omit the meat to have a vegetarian dish. I have also added fresh red and green bell peppers with the onion mixture if I have them on hand to add additional vegetables.
