This was a spur of the moment, what do I have in the fridge recipe. It turned out pretty well.
When I was in Zimbabwe last year, I tried a delicious dish that was slow-cooked in a three-legged cast iron pot over coals. The dish took an entire day to cook, and the meat came out very tender, with a rich gravy. The Potjiekos I ate in Victoria Falls was made with kudu (an antelope-type of animal), carrots, and potatoes. There may have been onion in there as well. I made my own version--using beef stew meat--in my Crock-Pot. It is delicious!
In the last year, I've become violently allergic to wheat. I often make the Atkins MiM (in many different flavors), so I thought I'd make one that will work for a Reuben sandwich. This will!
A friend from Mexico taught me how to make this. She didn't give me a recipe, but she had me watch her make it. The cinnamon adds a nice twist to the sauce. I was able to 'low-carb' it by substituting truvia for the sugar she normally used.
This was a dish that I put together with odds and ends in the refrigerator--it turned out to be really delicious! In fact, it was so good that I had a hard time stopping at one serving. I will definitely make this again!

This is the tuna salad I eat while on Atkins. It's simple, but oh so delicious. It would be easy to alter to your taste, whether you like celery or onions or apples or whatever.
