I had a craving for garlic and had zucchini, TONS of tomatos and garlic sitting around, and whipped this up. More carb conscious than heart conscious, but modifications can be made easily to suit your needs. Also, this is VERY easy to increase servings for.
I really recommend the BSN brand protein for taste and thickness. It is thicker than other protein powders and although taste is relative, I think it ranks highly.

Quick and easy stove top soup. It took about 15 minutes total to prepare and cook. I used the no salt added diced tomatoes and chicken bouillon to keep the sodium content low. The small amount of goat cheese adds a lot of flavor without upping the fat content too much.

Rinse the beans in a colander with cold water until the foam disappears. Combine in large bowl. Dice the bell peppers and onion the same size as the beans and add to the bowl. Finely dice the garlic and add to the bowl. Wash and dry your cilantro then chop and add. Sprinkle salad with olive oil and vinegar and season with salt, pepper, chili powder, cayenne pepper, etc. as desired. Makes about 8 1/2 cup servings.
